USTILAGO PICKERSHere Marty Sparks and Larry Evans display the results of a walk around the edges of an organic corn field. Big clumps of black and white Ustilago maydis, the corn smut, are the catch of the day. This fine fungus, called Huitlacoche by the Mexicans, is a delicacy. We fried these in butter and ate them as you might eat a fine seafood. They are dense and savory, like oysters, and are used to stuff tortillas or make rich black sauces. This same mushroom has caused serious dust explosions when it dries out in the field and gets ignited by a spark from a combine. More Social Pages... |
