These are some examples of Geopora cooperi that just came in from a lawn in Missoula, near a mature spruce tree. These show up with surprising frequency as the local immigrant squirrels don't recognize them as food.
They are delicious whirred into truffle butter or added at the last minute to a sauce. Careful preparation and minimal cooking is the key to truffle enjoyment, as the volatile flavors are easily cooked away.
